When the evening aarti ends and the lanes fill up, Varanasi goes looking for chaat. The city's signature is tamatar chaat — tomatoes and potatoes slow-cooked with ginger, green chilli and spices, mashed together on a big iron tawa, then finished with a sweet syrup, crunchy namak para and fresh coriander. It is served hot in a leaf bowl and tastes like nothing else in India.

Do not stop there. Palak patta chaat is a whole spinach leaf fried in gram-flour batter and covered in yoghurt and chutneys. Aloo tikki chaat brings crisp potato patties with tamarind and mint, and a round of golgappe (pani puri) is the traditional way to finish.

The famous chaat stretch is around Godowlia and the Dashashwamedh road, with long-running names such as Kashi Chat Bhandar and Deena Chaat Bhandar. Evenings are busiest — and that is when the food is freshest. Pick stalls with a crowd of locals, and ask for less chilli if you are new to Banarasi spice.

Godowlia is a short auto ride from Om Villa Heritage, so chaat after the aarti is an easy evening plan: watch the ceremony at Dashashwamedh, step out for a leaf bowl of tamatar chaat, and ride back to Assi. The lanes around Assi have good chaat stalls of their own, too.
